How to Make Jollof Rice of Life :D




INGREDIENTS
  • 3 cups of rice
  • 8 pieces of meat
  • 6 medium sized fresh tomatoes
  • 2 table spoons of fresh pepper
  • 1 large bulb onion (fairly chopped)
  • 1 medium size tin of tomatoe puree#
  • 1 table spoon of curry powder
  • ½ table spoon of thyme
  • 2 cooking spoons of vegetable oil
  • 2 Maggi chicken tablets
  • 2 litres of water and beef stock
(serves 4-6) METHOD
  • Grind or blend tomatoes and fresh pepper
  • Heat the vegetable oil for a few minutes
  • Add the beef and fry until golden brown, remove from hot oil and set aside.
  • Fry the ground tomatoe and pepper.
  • Stir and fry until the sourness is off.
  • Add the onion  and tomatoe puree.
  • Stir, add water and beef stock.
  • Wash the rice thoroughly and add to the pot.
  • Stir; add the curry powder and thyme.
  • Cook for a few minutes.
  • Add the Maggi Chicken tablets
  • Stir, taste and add salt if required.
  • Simmer until rice is cooked and but stir at intervals.
  • Remove from heat and serve with the fried meat.
